Egg-Free Chocolate Cookies in Mumbai, the Amsterdam Way

I have wanted to visit Van Stapele Koekmakerij for years. It's a tiny cookie shop in Amsterdam that makes exactly one thing: a dark chocolate butter cookie stuffed with white chocolate ganache. No menu, no variations, just a queue out the door for one cookie done right. In June this year I finally went. I stood in that queue, ate the cookie standing on the street outside, and knew I wanted to bring my own version of it back to Mumbai.

This July, I launched that version: our Amsterdam Cookie. Dark chocolate butter cookie, stuffed with white chocolate ganache, with milk chocolate chips folded into the dough. It's egg-free, which was the harder part of the project, because egg is usually what holds a butter cookie together and gives it that slight chew at the edge. I spent a few weeks in the kitchen adjusting the binding (more on that below) until the texture held without it.

Why egg-free, and why it still tastes like a "real" cookie

A lot of egg-free baking in India still gets treated as a substitution you apologise for, something you offer because a customer asked, not because it's good on its own terms. That's not how I approach it at Raisson D'être. Egg-free is one of our standard production lines, alongside gluten-free, sugar-free and vegan, and I bake every one of those to taste indulgent first. If a gluten-free customer or an egg-free customer is ordering a "diet" version of a cookie, I've failed at the brief.

For this cookie specifically, the dough relies on a higher ratio of butter and a small amount of cornstarch to get the structure that egg would normally provide. The result is a cookie that's slightly fudgier in the centre than a standard chocolate chip cookie. That contrast in texture is actually closer to the original Van Stapele cookie than I expected when I started testing.
