Our Story

Some of my earliest and fondest memories revolve around food. As a child, I would sit in the kitchen with my grandmother, both of us furiously scribbling notes while watching Sanjeev Kapoor and Tarla Dalal on TV. She would then guide me through making desserts like crème caramel and jelly custard trifle, her hands deftly moving through years of experience, mine following clumsily but eagerly. Baking with my mom and sister as kids was a cherished part of my childhood. In our Indian kitchen, we didn’t have an oven, so we relied on making no-bake mousses and decorating mousse cakes with Hershey’s Kisses. Sometimes, we even used a pressure cooker to bake cakes—Indian innovation at its finest!

As I grew older, my fascination only deepened. I devoured every episode of Raymond Blanc, Nigella Lawson, and Jamie Oliver, enchanted by their effortless passion for food. At the University of Oxford, I would spend my pocket money at Maison Blanc, savoring their pastries, marveling at their perfection, and stretching a single birthday cake over weeks just to prolong the experience. Cooking for my friends became my love language, each meal a way to create warmth and connection. I’ll never forget my first Christmas in London, where I made tiramisu for a dinner with my flatmates. By the time I looked up from my plate, it had been completely wiped out—a small, sweet victory that reaffirmed my love for baking.

At 25, while working as a research assistant at TIFR Mumbai, my sister and I started a pilot bakery called Moonlight Bakers. Since we were moonlighting, the name felt fitting. It was our first venture into the world of professional baking, balancing science by day and baking by night, fueled by passion and an unwavering belief in what we could create.

To refine my skills, I pursued a diploma program at the School for European Pastry, where I honed classic techniques and deepened my understanding of the intricate art of baking. This experience allowed me to merge tradition with innovation, shaping the unique creations that Raisson D’ētre is known for today.

Our Philosophy

Our name, Raisson D’ētre, reflects our core belief: Food should have meaning and purpose. Every creation is designed to bring warmth, comfort, and connection to those who enjoy it. We take pride in blending traditional European and Indian techniques with innovative flavours, ensuring that each treat is as delightful as it is memorable.

We also believe in inclusivity when it comes to indulgence. Almost all our bakes can be made egg-free, sugar-free, gluten-free, or vegan, ensuring that everyone can enjoy our treats, no matter their dietary preferences.

Based in Mumbai, we bake everything fresh to order, because we believe that great food is about more than just ingredients —it’s about the joy it brings when shared with loved ones. Our Chef

At the heart of Raisson D’ētre is Chef Akshina Mehta, whose culinary expertise and creative vision shape everything we bake. A twin and an introvert, Akshina has always found comfort in books and the world of flavours. She earned her Master’s in Immunology from the University of Oxford and worked as a research scientist in London and Mumbai before fully embracing her love for pastry.

She obsessively watches cooking videos and is deeply inspired by Momofuku Milk Bar. Her favourite cake flavours are passionfruit chocolate and coconut almond. When she’s not in the kitchen, you can find her enjoying chai and bhaji pav at a roadside tapri in her natural habitat. She’s also learning to embrace her curly hair —one day at a time.

With years of experience and a deep love for the art of pastry, Chef Akshina combines classic European techniques with bold new flavours to create unforgettable desserts. Her dedication to quality and innovation ensures that every treat you enjoy is crafted to perfection.
